it's been cold around here (we even had some snow last week)...

that, coupled with a serious bout of illness this weekend, has found us cozy at home and in search of some warm, comforting and nutritious food. so i thought i'd share with you our favorite, and extremely simple, recipe for lentils (this is our own adaptation of the lentils that maya enjoyed each week in her waldorf kindergarten class last year)...






waldorfmama's lentils
2 cups of green lentils (rinsed and soaked for about an hour)
6 cups of filtered water
1 bunch of rainbow chard, cleaned and chopped
pinch of thyme
1 teaspoon of sea salt
rinse and soak lentils for about 1 hour. add drained lentils to approximately 6 cups (3:1 ratio) of filtered water in a large pot. bring to a boil and then simmer for 45 minutes. rinse, drain and finely chop rainbow chard. add thyme and chard and continue to simmer for 10-15 more minutes. add sea salt. serve with rice crackers or warm homemade bread.
